Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable comfy spices and plump raisins make these much more irresistible. They'll keep for at least one week if kept in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (gluten-free if necessary and quantified like that )
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops on the sheet, and apply to the desired depth and width using 34 Best Healthy Cookie Recipes - How to Make Low Calorie, Low Fat ... a spatula. Bake at 325°F for 10-12 minutes.
